Lobster Lettuce Rolls

Do you love lobster as much as we do?  Try this fresh, low-carb lobster recipe for a healthy lunch.  The beautiful presentation is perfect for special occasions! 


  • 10 bibb lettuce leaves

  • 1 1/2 lbs cooked lobster meat

  • 3/4 cup butter

  • 2 Tbsp mayonnaise

  • 1 Tbsp dijon mustard

  • 1 Tsp mustard powder

  • 1 Tbsp lemon juice

  • 1 1/2 Tsp chives or green onions (sliced)

  • Salt and pepper, to taste


  • To cook the lobster meat, melt 1/4 cup of butter with 2 Tbsp of water.

  • Place the butter-water mixture in a blender, along with 1/2 cup cold butter, and puree until emulsified.

  • Pour the butter mixture into the saucepan and add the lobster meat. Cook until heated through, about 5 minutes.

  • In a small bowl, combine the mayonnaise, dijon mustard, mustard powder, 1 Tsp lemon juice, 1 1/2 Tsp of chives or green onion, and whisk well. Season with salt and pepper, to taste.

  • Remove lobster from heat and season with 1 Tbsp lemon juice, along with salt and pepper.

  • Portion out 1/2 cup of the lobster salad onto each lettuce leaf.

  • Serve.
