Lobster Lettuce Rolls
Do you love lobster as much as we do? Try this fresh, low-carb lobster recipe for a healthy lunch. The beautiful presentation is perfect for special occasions!
10 bibb lettuce leaves
1 1/2 lbs cooked lobster meat
3/4 cup butter
2 Tbsp mayonnaise
1 Tbsp dijon mustard
1 Tsp mustard powder
1 Tbsp lemon juice
1 1/2 Tsp chives or green onions (sliced)
Salt and pepper, to taste
To cook the lobster meat, melt 1/4 cup of butter with 2 Tbsp of water.
Place the butter-water mixture in a blender, along with 1/2 cup cold butter, and puree until emulsified.
Pour the butter mixture into the saucepan and add the lobster meat. Cook until heated through, about 5 minutes.
In a small bowl, combine the mayonnaise, dijon mustard, mustard powder, 1 Tsp lemon juice, 1 1/2 Tsp of chives or green onion, and whisk well. Season with salt and pepper, to taste.
Remove lobster from heat and season with 1 Tbsp lemon juice, along with salt and pepper.
Portion out 1/2 cup of the lobster salad onto each lettuce leaf.
